Bananas.
BANANA FRITTERS.--After paring your bananas, cut them in two in the middle, then slice them lengthwise in slices about a quarter inch thick. Make a batter composed of two eggs, one cup of milk, one teaspoonful of baking powder, one of butter, and about one cup of flour. Cover over each slice with this batter, and fry in butter. Serve this with wine sauce.
WINE SAUCE.--One teacupful of wine, one cup of sugar, one-half cup butter, and one egg; cream the butter and sugar, and add the egg, well beaten; set in a pan of hot water, and heat--not cook; just before serving add the wine.

BANANA AND ORANGE PUDDING.--Take one quart of milk, four eggs, a teaspoonful of extract of vanilla, a pinch of salt and sugar, and eggs well beaten, and stir it until it begins to thicken. After peeling the bananas and oranges, cut them in thin slices, put in dish, and pour custard over them. Serve cold.

BANANAS are grown in most all of the Southern countries, especially in the West Indies and Cuba. There are two kinds, the yellow and the red. The latter is considered the best, and the season for them is from March to September; the season for the yellow ones continues to the middle of October.
